twd: traditional madeleines ... that drove me mad!

okay, wanna know the real reason i didn't get posted for tuesdays with dorie early like i usually do?

because me and my maddie pan had a fight, and the darn pan won.

i was super excited when tara from smells like home chose madeleines for this week's tuesday with dorie. i love madeleines and made them not too long ago with julia's modified génoise batter. so i was keen to try out a different recipe and see which one i preferred.

dorie's pan from tonight

well, dear dorie you are still not my favorite. not only was i humpless but as you can also see i had a disaster with getting them out of the pan. this is actually what happened last night (monday) and i thought i'd give it another go tonight with even more butter in the pan (tuesday). but the result was the same. wahhhh :(

julia's pan from last month

and so neither dorie (great taste, but stuck in pan) or julia (so-so taste but no sticking problem) won me over. i will confess though, i used the paddle attachment instead of the whip. do you think that was the reason why it stuck? or maybe it's time to let a gentleman into the ring?

  1. Sad! Too bad Dorie's recipe didn't cooperate. I've heard good things about David Lebovitz's recipe though, so I'm expecting a review sometime on that one :)

  2. This, my dear, is FABULOUS. I empathize with you, really I do, and don't mean to wish failures on anyone. However, at least I know I am not the only one who's madeleines came out like yours. And Julia's were so crisp and cooperative! Yes, let's try David's recipe next!

  3. yes, true, misery loves company! i, too, was happy when i saw other people had sticky problems. and i thought for sure tonight's batch would come out better!

    but i am still looking for that perfect madeleine and so i am totally game for trying out david's recipe! so if anyone wants to join me, let me know!

  4. I had the sticking problem with my very first madeleine recipe so this time I went all out with the butter and flour! At least they were good, right? :)

  5. I've never been able to get the butter and flour thing to work with any type of cookie or cake. I wonder if nonstick spray might work better? That's probably sacrilege with Madelines though...

  7. Oh no! Next time try to knock them out of the pan as soon as you take them out of the oven. That helps. Here's a link to my favorite madeleine recipe if you want to give it a whirl:

I sprayed the hell out of my pan (with commercial spray provided by a restaurant friend) and I still had a bit of sticking with this recipe (and I used the whisk) so I'm not sure what to tell you. I'll be following along though, anxious to see how David measures up to the ladies in the madeleine department...

  11. Aw too bad your madeleines drove you a bit crazy. They look cute though! I find that if I leave them in the pan for a few minutes after taking them out of the oven, they come out a lot easier. When I try and remove them right away it's always a bit of a battle.

  12. How frustrating. I hate that. I've only made madeleines 3 times and I used a recipe from Nigella Lawson. I would certainly try David Lebovitz's recipe though.

  16. I also had major sticking problems with my madeleine pans. I was so frustrated I went out and bought non stick madeleine pans.

    Don't give up on the madeleines - give the other recipes a try!

  19. Bummer they stuck! I would be so sad too. Not sure if it had anything to do with the paddle vs whisk but I know reading other TWDers that they had to butter the heck out of their pan to get the suckers to come out! *shrugs.

  21. O you poor poor thing. I was too intimidated to join TWD even though I would have loved to. I saw some swell madeleines at Tartlettes; think they were David Lebovitz's recipe. Do go & peek in at Tartlettes. :0)

  22. oh crud. i know you have to grease the s**t out a the pans, but sounds like you did. how disappointing...if you make DL's i am interested to see how they come out. i was ticked that dorie's had no bump.

  23. so sorry it didn't work out for you. i can't really advise you on this recipe, as i did not make it (i opted for the cream cheese torte instead)

  28. gosh.. wat a pity. i guess perhaps the paddle didn't manage to whip the eggs till they were stiff enough? better luck next time...

    think i would try the David Lebovitz's recipe next time around too!

  29. I had 4 of 12 of my Madeleines refuse to come out of the pan - the others cooperated. I wonder if a silicone pan would work better; I'm thinking of the possibility. I agree that they tasted really good.

  31. Out of curiosity, did you fill your pan and then chill it for 3 hours? I have seen others comment on having sticking problems and they did chill the dough in the molds. I wonder if the flour dusting would be absorbed during this time making it less effective. I butter (cooking spray doesn’t seem to work for me) and flour my mold and fill it right before baking and don’t have problems with sticking. I have a non-stick pan, but without a good butter/flour coating it will stick with the best of them. Also, I bet the paddle attachment didn’t incorporate as much air as a whisk would have, but I wouldn’t expect that to effect sticking so much as texture and the rise.
